In 2011, Chef Mariano Maldonado and Rocio Navarrete opened their first restaurant, El Gaucho Inca, blending Peruvian flavors, Argentine tradition, and Italian influence into a warm, family-style dining experience.
For Mariano, food is in his blood. His grandparents came from Italy, bringing with them cherished recipes and a deep respect for fresh, quality ingredients. Growing up in Argentina, he also embraced the art of the grill — where cooking is more than a technique, it’s a way of life.
Rocio brings the heart to the table, creating an atmosphere where every guest feels like family. Her dedication to hospitality ensures that every detail — from the welcome at the door to the last bite of dessert — is filled with warmth.
